My absolutely favorite cold beetroot soup for hot summer! Tried it in Lithuania on my vacation few years back and it was love at first sip. It is called Šaltibarščiai (sorry if I misspelled something I'm not Lithuanian:)). It's fantastic!

As a a died in the wool Lithuanian through band through it gave me a warm feeling seeing this on Lemmy as the Lithuanian subs are not yet populated so this has been a glaring hole in my feed.

For anyone interested there is a winter version simply called ‘Barščiai’ which is also amazing.

Also big in Poland. The winter version is called “chłodnik litewski” — literally “lithuanian cooler”. And yeah it’s basically cold borszcz.

Always wondered about cold soups. I’ve only had had soups. This one looks almost like a desert due to color.

I love a good gezpacho in the summer. Super refreshing

This one’s new to me and it sounds delicious. I love everything that’s in it. The colour is gonna be a challenge for westerners though… Pepto Bismol trauma giving me an unpleasant Pavolvian response to that shade of pink haha

Feel like it might be worth trying anyway

I have beets, cukes and dill growing in the garden right now, so this is perfect timing! My beets are golden tho so it won’t be that beautiful color sadly. Now to figure out where to get kefir!

Once I made it with buttermilk it was good too and I think I read some recipe where plain thinned yoghurt was used. Hope I did not offended fellow Lithuanians here with this recomendation hehe.

The color kind of reminds me of Pepto-Bismol though I'm sure it doesn't taste like Pepto-Bismol.

Indeed it is, whenever I take it the taste makes me want to vomit. It usually makes me feel better afterwards so in a way it's worth it (I only take it in the instance where I have a very bad stomach ace).

Heh, yeah the color is great and it usually gets darker shade of pink after some time in fridge.
