Good question! It's because in this case the invaders (coming from below) will have their shields on the side the enemies are coming from. The defenders (coming from above) will have the shield facing away from their opponents

So spiral staircases usually went to the left because of that? I'm not sure that applies here, because this is just a single tower with a single room in it, not a part of a larger castle.

Not always. They were often used for decoration (especially with single towers like this, like you said), but it's still a fun fact that I enjoy

That source even says it's arguable. I would hardly use that as proof that it's a myth
