Japanese は is pronounced "wa" when used as the topic particle (as it is in the example), but still written "ha"
Wouldn't the transliteration defer to the phonetic rendering, though?

Enoki mushrooms are also called "see you tomorrow mushrooms" for the same reason.
However I always chew my food so I've never noticed it.
