Because selective breading is technically a form of genetic engineering/modification. I think it's fine and we do it for thousands of years.
New methods make it easier, faster and gives more options what to do (modified proteins...).

It just gives you ideas what to do, you have to figure out/iron out the techniques. They are for each settup different so with any book/manual you have to tinker with it yourself.

More general answer than you expected, but...
I really like when the sound design in movies makes sense - it "plays" in radio, gramophone...
For example "Black hole sun" cover in first episode of Westworld is just brilliant and caught me off guard (I didn't know what it is about).
So penguins would be bad drivers.
There are lot of them, even in communist regime there were made good films. I would probably suggest something from the pen of Zdeněk Svěrák.
