Personal opinion is that if you are keeping the card for 5+ years, get something with a little more oomph. Get the 6750 or 6800 imo
On the other hand, If you think you'd be able to upgrade in 2-3 years, then the 6700xt is fine.

Don't know if you still need the help, but a few months ago I was in the same boat as you. I wanted to get a new GPU to replace my GTX 1650. It was the same thinking for me, the 6700xt, 6750xt, or the 6800. First went for the 6700xt, but had to RMA it, and by the time I got my money back, the price of the 6800 was the same that I'd paid for the 6700xt so for me it was a no-brainer to buy the 6800.
But, to answer your question, in my opinion, the 6750xt doesn't really justify the price increase, since you could just tinker with the 6700 xt and get a similar result. Also if I remember correctly the 6750xt also runs hotter than both the 6700xt and the 6800. So that just leaves the 6700xt and the 6800. If you want to use the GPU for the next 5-6 years I'd go with the 6800. More VRAM, it's faster, from what I remember watching benchmarks, the difference in power consumption is not that large. For 1080p (same as my monitors) you'd get a pretty good card, which IIRC is about 15-25% more powerful than the 6700xt depending on the game ofc. Ohh and if you ever upgrade to 1440p, then the 6800 will be an even better choice.
Also, I'm sure that you already looked at a bunch of reviews and benchmarks but it's still nice to know what each card is capable of.
