I had also install apparmor and firewalld for security and timeshift for btrfs snapshots. I think, for me, there is no sense to switch back to windows.

Just accept all, then delete cookies automatically. Setup any browser you use to delete any cookies and write a whitelist for the sites that you gonna need to auto login.
Steam, Lutris for league of legends and GOG's games and even Heroic Launcher for GOG's games with cloud sync for save data of games or Epic. Everyone works very well on Arch.
I think Arch Linux could be for you. You can install it with archinstall script. It's relatively straightforward.

Ye , I think the list could be more large if I buy other games. Oh, I forgot Cyberpunk and Battlefield 4 and EA App through Lutris. The only issue I found is the compile of shader cache of Apex Legends and Hogwarts Legacy. It's a lot of time to compile.
I use GTX 1660 Ti and I had some problems, but nothing of impossible to solve. I use Arch with zen kernel and nvidia-dkms with XFCE as DE. List of games that I play: Apex Legends, Hogwarts Legacy, Grime, Ironsight, Albion Online, Nostale with Steam. League of Legends with Lutris. Vampyr, Bioshock Remastered 1 and 2 with Heroic Game Launcher.
Mee too. K-9 doesn't have the backup's feature for pop3 protocol. So It cannot permit to save mail locally, for me it's the base for a privacy focused e-mail app. IMAP is fine.

The are some bug, especially with xwalyand apps like steam. I found a bug where steam doesn't find adwaita theme and crash after few seconds, but the most of games I ran works preety well or perfectly.
