It was hard for me too, but PopOS made my life easy back in the day when I first tried.
No drivers needed, everything worked out of the box, including the Nvidia GeForce 2060 Mobile. So I just needed to get comfortable with the OS in general.

Surface the Web with VPN, Ad blocker, Anti-Tracker, use Linux. In 5 years, I have never encountered a virus or a trojan. Following these 4 "rules" and you'll be fine on any website.
iPhone 8 stills fine for jailbreaking, but newer devices have more security layers that need to be bypassed, therefore you will have stability problems.
Also now, jailbreaks are rootless, which I don't know what really means (probably less tweaks functionality).

Jailbreak? Jailbreak is dead since iOS 15 but ok 🤙 Nowadays, buying an iPhone to jailbreak afterward, doesn't make much sense at this point. You pay so much to get stability and constancy, and jailbreaking takes both away.
As ex jailbreaker, I switched to Android for this reason.
Probably they will add a way to sideload ~~APKs~~ iPAs on device, without 3th party tools.
They might increase the 3 apps limit too.
Why don't you try becoming comfortable with Linux while using it in a Virtual Machine? I tried different distros too, and then I decided which one was the best for me.
We can't really suggest you one, if we don't know what you are going to use it for.
You may want to do some research, because different distros have different purposes (gaming, privacy, programming, easy to use etc etc).
