If mine was big enough for a skate park, I’d probably put another house in it.
Looks like you might want something non-traditional so without knowing anything about yiur budget, lifestyle, yard size, or HOA here's some random ideas:
- Dog/squirrel obstacle course
- Ice rink (DIY/kit)
- Chicken coop
- Duck/koi pond
- Miniature hedge maze
- Observatory
- Yurt
I like Cherry Trees. In Spring they have a nice white or pink blossom, then go back to bright green leaves.
Why not a fruit tree? There's so many to choose from. They come in all shapes and sizes, and it's much nicer to have a practical tree that gives you free food rather than a purely decorative plant.
Edit: Forgot to say that they're great for the bees and local ecology, too!
You could do an obstacle course or pieces of one, like a balance beam, monkey bars, gymnastic rings. Some people do full-on ninja warrior shit. And it’s also possible to put in drought-tolerant or native plants that mostly only require work in the first couple years of getting established.

Inconspicuous garden speaker & subwoofer set, 3D laser and some outdoor lighting if you don't already have a nice space to hang out at. It's nice having a little table and a couple chairs but making it easy to hang out in can make a big difference.
Could pick up a hobby doing some kind of sculptures whether it's metal or a skatesticle course, could build a local forge.
If you want some greenery outside of walking spaces (or in) that's low maintenance then just seeding clover and wildflowers can actually be easy as long as it's not too hot and gets watered every other day or so. They sprout pretty quick too.

Since you've already got one tree, sink a 4x4 post in concrete (or just bury it if you want less permanence and like to live dangerously) to use for securing the other end of a hammock (with one end wrapped around the tree).
The post can serve double duty too - you could use it as a tetherball post (better to use a metal fence post in that case though? Or do they make dedicated tetherball posts), for either you or dogs.
