Vague recipe: potato chopped, Onion quarted, mustard seeds, cumin seeds, turmeric, coriander & chilli powder, salt, pepper, mustard oil. Tossed and Roasted.

To be honest, I didnt measure it out I just got high, fancied a bowl of potatoes so added the ingredients in by eye!

Your recipe looks vegan but if you're vegetarian adding in some fried up paneer cubes would make for a great texture difference and would be pretty tasty. I've been known to make paneer sticks fried in olive oil and curry paste as a munchies snack

Yes I am vegan. I've never had paneer (and obviously won't) but I've used tofu to replicate it slightly. But good tip for the people who would be open to that, as it does sound delicious!
