I currently use Simple Gallery. While it is not bad, the UI could definitely be better. I tried Aves for a bit but it seems to not have a built in photo or video editing feature which is a deal breaker (unless there is a version with those features?) Any suggestions?

Aves is the best I've used by far, I just use another app for editing. There's a button to edit in the aves app and you can open a third party app conveniently that way

Seconding Image Toolbox, it's awesome! You can convert between image types, resize/crop, draw, do background removal (basically manually erasing parts of the pic to make them transparent), it has a nice collection of filters you can apply, and it even has a color picker.

Can it edit videos as well?

You can only edit images with it. For videos though, if you're okay with going through the command-line you could use ffmpeg with Termux.

I used to use QuickPic back in the day, and when it went downhill I couldn't settle with any other gallery app, so I ended up going with the gallery mod maintained by WSTxda. Might be worth checking out, perhaps?

I still use QuickPic to this day, using one that's frozen in "good" version. There's still nothing beating it.

You can change simple gallery collors to any color you want I personally swltched to Aves simply cause it could open more exotic formats

I've used Camera Roll for years now. It has been abandoned years ago though.

It's editor allows for cropping and rotating only.

I'm pretty happy with Simple Gallery by Simple Mobile Tools. These guys make great minimal FOSS apps that respect your privacy. Just make sure to download it from F-Droid, since the Google Play version doesn't have all the features. If you dislike F-Droid, you can also use Obtanium to directly pull from their GitHub repo. It also notifies you whenever an update is available, and it allows you to download and install new versions of an app.
