Does the monster have its own last name? Otherwise calling it Frankenstein may not be wrong.

In the story, he wants to go by Adam. But it's unclear what his last name would be.

It's a bit dubious to call Victor his father

Wouldn't it be "Adam von Frakenstein" or "Adam Frankenstein" since Frakenstein did create him

Don't fathers technically play a part in a dual role of creating the child by providing genetic material while the mother provides another half

The mothers body does the work of creating the baby from genetic instructions from the mother and father
