Linux is a family of open source Unix-like operating systems based on the Linux kernel, an operating system kernel first released on September 17, 1991 by Linus Torvalds. Linux is typically packaged in a Linux distribution (or distro for short).
Distributions include the Linux kernel and supporting system software and libraries, many of which are provided by the GNU Project. Many Linux distributions use the word "Linux" in their name, but the Free Software Foundation uses the name GNU/Linux to emphasize the importance of GNU software, causing some controversy.

I don't think Pantheon even supports Wayland, although I could be wrong.
If you're fine with giving up customisability and trying a new distro, you could give Elementary OS a spin. It uses the pantheon DE, and the entire OS is designed around offering a mac-like experience.
Otherwise Gnome and some customisations will be your best bet IMO, if anything it might be the ideal route to stick with here
I managed to get latte Dock customized to my liking. It works fine and I can get my work done with ease. I do have elementary, an old version mind you, on my Ventoy usb drive if I ever need it.
