I feel like I should like it, but its episodic nature completely ruins it for me.

Deep Space 9 is the first ST show to have season long arcs peppered with self-contained episodes. Since someone else already mentioned Discovery, I think DS9 is a pretty good jumping on point for "classic" Trek.

Discovery is the first Trek show that isn't episodic. Each episode has their own arc. Could use that as a jumping off point to discover things you find interesting and then watch episodes of other shows central to that.

But episodic content makes it great!

Stories aren't drawn out longer than necessary, and if you encounter a bad story, you can just watch the next one.

It still has a overarching story.

That makes it so much worse. "Yesterday we experienced x, something that might have seemed incredibly traumatic and disruptive, but please do not fret, for we are doing great today! In fact, we don't remember a thing from yesterday, hehe! Ok, anyway, we should really focus on our larger goals."

Then you should try DS9 as it's a good balance of episodic and story arc driven
