The whole structure, really. I read the infogram user guide thing, but I'm still not keen on how "instances" and communities work. What instance can see what, etc. Is there a lemmy equivalent of /r/all?

I recommend you read this post here https://lemmy.fmhy.ml/post/24569 If you're still confused I am happy to explain further, as for r/all nope, not that I'm aware of but if you go to the all tab here you will get to see posts from all the instaces we federate with.

I've been using jerboa for my reading, but it kinda sucks trying to find communities from scratch. Is there a macro-wrapper that I can scroll all the popular instances from alltogether? I'm on android mobile 99% of the time.

Not that im aware of but you can access the All tab and see the most active posts from instances we federate with
