The "Add link" option is greyed out there. Is there anything I can do within Jerboa to enable more instances to play nice? Or is it something that the instances themselves would need to implement in some way?

Actually, it looks like I can't scroll down in any screen within the settings options.
I just found it as well, it's in your phone (e.g., Google) settings. For my phone (Samsung) I go:
(Samsung) Settings -> Apps -> Jerboa for Lemmy -> Set as Default -> Supported Web Addresses
That leads to the page shown in the OP screenshot ๐
Thanks. Did that, but still not showing up and still can't scroll down in settings/look and feel. Reinstalled the app too, so I don't know ๐คท
