Even though I don't think it will have an effect on the decision they took, I do want to see if the admins replace mods or take control of subreddits

Pure guess work from me, but I assume reddit could just roll back and restore a nuked sub from backups? Maybe lose a few hours to a days worth of posts?

Possibly. But if it's a large amount of subreddits that had a lot of content, it would be a lot of work and time for them, I'd assume. Make em work for it.
