I love GManlives for his "man on street" approach and when they were on, I watched Pretty Good Gaming (they closed a few years ago). I also watch the consumer advocate SidAlpha, although he posts rarely due to IRL committments.
Gaming
From video gaming to card games and stuff in between, if it's gaming you can probably discuss it here!

Northernlion is my favorite, and he absolutely pumps out the content. His banter is perfect for me.
Skillup is a great channel for reviews and news. Lately I've been enjoying FLEEKAZOID for humorous and edgy content, sometimes it's nice to not take something so seriously.
Havent really watched lets plays in a long time, but recently started watching Mapocolops. Hes got alot of content on his channel and is pretty fun to watch
A couple ones with longer videos, and some music-related channels are my (current) favourites.

And also shoutout to TotalBiscuit. Still do miss his quality content. Haven't seen any channel nowadays come close to it.
I've been really enjoying https://www.youtube.com/@TheSaltFactory and https://www.youtube.com/@minimme. the salt factory does long form detailed examinations of games and minimme does shorter examinations of obscure games.
shoutout to simpleflips
I'm a big fan of Ryukahr. He's a super chill guy who mostly plays Super Mario Maker levels and is incredibly good at them.
I like watching AfroSenju, I think his personality is pretty hilarious. Though I only watching him once in awhile because sometimes the humor is just a little too one note. I also like Throne to watch Madden being a shitshow for free instead actually paying for it. But he has not posted in about a month and he sounded pretty fed up with the game at this point. I don't like other Madden YouTubers but he also reps Minnesota sports so I appreciate that as Minnesota native and sports fan.
If you like horror games Insym.
Interested in learning about some of these creators bc I only really watch Dunkey anymore. That little imp has really matured in terms of the kind of content he produces. He's insightful and he cracks me up.
I enjoy watching ironmouse on twitch.
Josh Strife Hayes makes really good videos about mmos and retro games ( on his other channel ). I love the constructive criticism he gives devs and his sarcastic delivery.
Gaming is a pretty broad topic, so I'll give a range of answers that are gaming related but not necessarily strictly gameplay.
Summoning Salt - Speedrun Historian
8-Bit Music Theory - Video Game Music Theory
Game Maker's Toolkit - Video Game Design Theory
Jacob Geller - Video Essayist with focus on Games
DougDoug - Community Influenced Gameplay with Light Coding (also hilarious)
But that's my selection.
I've been keeping up with Thabeast721 in his quest to beat every N64 game ever made (and he means all of them) It's very fun seeing some of the more obscure games and how he manages to figure out some of the Japan only games.
I'm a fan of Vinesauce and Vinesauce-adjacent streamers (Jabroni Mike), but I occasionally enjoy other channels that people mention here, too
The three gaming YouTubers I watch most right now are Hutts, ProJared, and jacksepticeye.
None of them take themselves too seriously, and love a good laugh. There's a mix of long form and short form content there, but it's all unscripted and most of it is largely unedited.
The ones I've been watching most recently have been No beans and Kaif, Wirtual and his casting vods for TMGL, and the odd Jacksepticeye or Markiplier when i see their vids.
I'm a Dark Souls addict, so Iron Pineapple, Ymfah, VaatiVidya, Lobos Jr, and The Backlogs are all weekly watches for me.
And of course the MVP, Dunkey.
Have you seen TBSkyen's Boss Designs series? Because they're some of the best blind playthroughs I've seen period. He puts a lot of effort into flexing his art degree and writing a mini-essay about the boss he just fought at the end of each video. So far he's gone through Dark Souls, Dark Souls 2 and just finished Bloodborne. Honestly I like his DS2 series the most because he actually genuinely appreciates what FromSoft was doing.
Oh, yes, but I wasn't subbed. Thanks!
CJUgames, Many A True Nerd (MATN), ManlyBadassHero, and Markiplier are my favourites. Except for MATN, they all focus on horror games. I like MATN for his strategy game playthroughs, such as Civ or Xcom.
