As a former fast order cook ... I always agreed with every order I got no matter how stupid. Did the best I could with what I had in a short amount of time and served everyone more or less the same thing. I wasn't a gourmet chef, just a teenager that served burgers and fries and other fast food stuff in our family run fast food joint.
Of all those who made special requests and I didn't listen to the changes - Half the people didn't complain, most of the other half complained but ate their food anyway and a few gave me a hard time but I didn't care and didn't serve them again (they came back anyway and ordered later on without special requests any more).
If you serve good food, people may make changes but you ignore them and they'll come back. Those that complain too much or are too picky about their food will either give up trying or never come back to your place again.
It works out in the end ... if you maintain quality, customers keep coming back. If you don't, you go out of business. Those that are picky move on and disappear or just order like everyone else while the rest of the customers rely on your consistent quality.
You can maintain quality and give people what they want (within reason). It's not mutually exclusive. A greasy spoon is way different from other dining experiences and you can get away with more.
